Food Network star Ree Drummond’s Lemon Chicken is the ultimate one-pan dinner. The Pioneer Woman host created this creamy, tangy dish using basic ingredients for an easy, put-it-together-tonight kind of meal.

Drummond’s Creamy Lemon chicken will become a regular on your menu

“Creamy lemon chicken,” Drummond says on the Food Network video for this recipe. “I mean, is there anything better than that in the world?”

The Food Network cook’s recipe calls for flour, olive oil, boneless skinless chicken thighs, minced garlic, white wine, heavy cream, grated Parmesan cheese, one zested and juiced lemon, spinach, and fresh basil.

“I love lemon chicken and this has spinach in it,” Drummond added. “I’m just going to serve it straight out of the skillet, which to me means easy in so many ways. First of all, when you serve things out of a skillet, you don’t have to dirty up a whole separate platter. You don’t have as many dishes to do at the end of the evening.”

She quipped that having less dishes also means “you can sit down and stream your favorite trashy TV show, which is my favorite leisure activity, let me tell you.”

The culinary personality starts by “dunking” the chicken thighs in flour. “This is not about creating a thick breading; it’s just kind of lightly dredging in the flour mixture and it creates just a little bit of a golden crust, without being sort of a complicated, assembly-line breading process,” Drummond explained.

She notes that the chicken should be cooked all the way through because “it’s not going to have much of a chance once you move on with the sauce.”

Once the chicken has cooked fully, it’s removed from the skillet and in its place, minced garlic is cooked, followed by white wine. Heavy cream is added, giving the dish instant body. It’s time to add the lemon zest and juice (“There’s nothing like the zest of a lemon to drive home the lemony point”).

Parmesan cheese is sprinkled in, the heat is “turned down,” and the baby spinach is folded into the sauce. The chicken is returned to the pan and lemon slices are garnished all over the chicken. That’s it!
